Ingredients
  

  • 1 cup part-skim mozzarella cheese, shredded or finely diced
  • 1/2 cup whole wheat pastry flour
  • 1/4 cup unflavored whey protein powder
  • 1 large egg
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Cooking spray or olive oil spray

Method
 

  1. In a large mixing bowl, thoroughly whisk together the whole wheat pastry flour, protein powder, baking powder, garlic powder, onion powder, oregano, salt, and black pepper.
  2. Create a well in the center of the dry ingredients and add the shredded mozzarella cheese, egg, and Greek yogurt.
  3. Mix until a cohesive, slightly sticky dough forms, avoiding overmixing.
  4. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  5. Once chilled, lightly flour your hands, take small portions of the dough, and shape them into donut shapes.
  6. Preheat the air fryer to 375°F (190°C) for 5 minutes.
  7. Lightly spray the inside of your air fryer basket with cooking spray and arrange the mozzarella donuts in a single layer.
  8. Air fry for 8-12 minutes, flipping halfway through, until golden brown and cooked through.
  9. Carefully remove the donuts from the basket and serve warm.

Notes

Chilling the dough is crucial for perfect texture. Cook in single layers to avoid overcrowding.
