Ingredients

Base
  • 1.5 cups chickpea flour also known as garbanzo bean flour, besan, or gram flour
  • 1.33 cups water room temperature
Structure and Texture
  • 0.25 cups flaxseed meal
  • 0.25 teaspoons salt optional, adjust to taste

Method

  1. In a medium mixing bowl, combine chickpea flour, flaxseed meal, and salt. Whisk well to blend evenly.
  2. Slowly pour in water while whisking continuously until the batter is smooth and free of lumps. It should be thin and pourable.
  3. Let the batter rest for at least 10 minutes to hydrate and thicken slightly.
  4. Heat a nonstick or well-seasoned cast iron skillet over medium heat. Lightly grease if not nonstick.
  5. Stir the batter. Pour 1/3 cup into the skillet and quickly swirl to spread into a thin circle.
  6. Cook for 45 seconds or until edges look dry and bottom is golden. Lift with a spatula—if it releases easily, flip it.
  7. Cook the other side for 15–30 seconds until golden and flexible.
  8. Transfer to a towel or rack and stack with parchment between each. Repeat with remaining batter, adjusting heat as needed.

Notes

For thicker tortillas, use 1 to 1.25 cups water. For thinner, use 1.5 to 1.66 cups.
Cool completely before storing with parchment in an airtight container. Refrigerate up to 3 days or freeze for up to 6 months.
Reheat in microwave wrapped in a damp towel or on a skillet until warm.
